Guacamole

Ingredients
- 4 avocados
- 2 ripe tomatoes
- 1 small onion
- 3 to 6 cloves of garlic
- 45ml lime juice
- 45ml lemon juice
- salt to taste
Cooking Instructions
Pick ripe avocados, where the skin is dark and they are fairly soft. If they are too green and hard they won’t taste good or mash well. Peel the avocados and remove the pits then mash in a bowl with a potato masher. Finely chop the onion and tomatoes.
Add all ingredients but the garlic and salt to the mashed avacados and mix. Either finely chop or use a garlic press and add that to the bowl, adjusting for taste (some people like us want a lot of garlic). Salt to taste.
Serve with tortilla chips or use in 7 layer dip.
Notes
After reading several recipes for guacamole we decided to use bits of all of them to create our own. This is an excellent tasting dip. Always use fresh avacado and tomato. If you smell the tomato at the store you should be able to smell the plant. If you can’t they are either not fresh or mass produced highly manipulated tomatos and won’t be worth using.
